How Induction Cooking Works:

The secret of induction has been around in scientific laboratories for many years, but for other uses besides cooking.

  1. The element’s electronics power a coil (the red lines) that produces a high-frequency electromagnetic field (represented by the orange lines in picture below).

  2. The field produced then penetrates the metal of the ferrous (magnetic-material) pot and sets up a circulating electric current, which generates heat.
  3. The heat generated in the pot is transferred to the contents inside the pot (food or liquid in the pot).
  4. Nothing outside the pot is affected by the field. As soon as the pot is removed from the cooktop, or the cooktop is turned off, heat generation stops.

Excite a magnetic material with a magnetic field and you get heat.

While using cookware with a magnetic property, such as steel, iron or other magnetic material, the induction cooktop will transfer energy directly into the material and not into space or the surrounding cooktop.
